The Pastry Senior Chef de Partie (CDP) plays a pivotal role in overseeing the daily operations of the pastry section, ensuring the preparation and presentation of high-quality desserts, baked goods, and specialty items. This role involves hands-on production as well as managing junior pastry staff, ensuring consistency, creativity, and adherence to hygiene and safety standards. The Senior CDP is expected to collaborate with the Head Pastry Chef on menu development, seasonal offerings, and new product trials.
In addition to maintaining production standards, the Senior CDP takes charge of stock control, ordering supplies, and minimizing waste through efficient planning and portion control. The role requires strong technical baking skills, an artistic eye for detail, and the ability to inspire and train others within the pastry team. This position is suited for professionals who are passionate about pastry arts and thrive in a fast-paced, quality-driven kitchen environment.
5–7 years of professional pastry experience in high-end hotels, restaurants, or patisseries
Proven skills in dessert, bakery, and pastry preparation techniques
Strong knowledge of hygiene, food safety, and HACCP regulations
Creativity in flavor pairing, presentation, and menu development
Ability to lead, train, and motivate a pastry team
Excellent time management and organizational skills
Proficiency in stock control and waste minimization practices
Flexibility to work in a high-pressure, fast-paced environment
