The Bakery Chef de Partie (CDP) is responsible for overseeing a specific station in the bakery kitchen, ensuring the consistent preparation of high-quality baked goods. The CDP leads a small team of junior chefs or commis and is accountable for executing recipes, maintaining food safety standards, and assisting in menu development. The role demands precision, creativity, and leadership in a fast-paced kitchen environment.
Key Responsibilities:
Culinary diploma or certification in Baking & Pastry Arts
3–5 years of experience in a bakery or pastry kitchen
Strong knowledge of dough preparation, proofing, and baking techniques
Ability to manage a section and meet production targets
Familiarity with HACCP and food safety regulations
- Produce bread, pastries, and other baked items according to recipes and standards
- Supervise and train junior staff within the bakery section
- Maintain cleanliness and hygiene of the workstation
- Ensure inventory is sufficient and inform Chef of shortages
- Contribute to new recipe trials and seasonal offerings
- Monitor baking times, temperature control, and product quality
